I am rather happy right now because all the gorgeous vibrantly colored summer fruits are in season! My mouth waters at the thought of juicy nectarines and peaches, cherries and strawberries, yum! I love going to my local farmers market and sampling all the season’s bounty, picking the best and sweetest of the lot and taking it home to eat straight up or use in a wonderful salad or sauce.

Being a California girl, there is a ton of Mexican influence everywhere, and with that comes gorgeous, ripe, spicy salsas. I kid you not, I could live on salsas because I love them that much! They are tasty, refreshing, lo-cal, full of flavor, and brighten up any dish. I totally love the idea of putting a twist on traditional salsa by using fresh summer fruits in place of tomatoes. You can serve these sweet and spicy salsas on top of grilled fish or chicken or as refreshing appetizer at your summer BBQ.

Following is my basic salsa recipe which you can customize to your taste preferences and seasonal bounty. Bon Appetit!

Romy Raves Fresh Fruit Summer Salsa Recipe

 

1 cup fresh strawberries or nectarines or peaches or cherries etc, chopped
1 fresh serrano or jalapeño chili, finely chopped (stems/seeds removed but if you like heat keep’em!)
1/4 cup sweet onion, finely chopped
2 tablespoons fresh cilantro, finely chopped
1/2 teaspoon fresh lime juice
1/4 teaspoon salt
1/2 teaspoon sugar if desired
1 slightly ripe but firm avocado, chopped (optional)

Combine all of the above ingredients in a bowl, adjust cilantro, chili’s, salt, sugar and lime to your personal taste. Chill at least 1 hour to combine flavors. Serve with warm corn tortilla chips or on top of grilled chicken or fish.
